Ingredients

  • Kombu
  • 200 ml soy sauce
  • 200 ml lemon juice
  • 200 ml dashi stock
  • 200 ml rice vinegar
  • 100 ml mirin

Method

  • Take a bowl. Add Kombu, soy sauce, lemon juice, dashi stock, rice vinegar and mirin.
  • Just leave this for 24-hours inside a fridge and after that take the Kombu out, and then you place it in a jar and you can keep in the fridge for at least a month.
