Eel sauce, how to make Eel sauce

Ingredients

  •  1 cup of mirin
  •  ½ cup unflavoured sake
  • 1 cup sugar
  • 1 cup soy sauce
  • 1 tbsp cornstarch + water (1:1)
  • 4 tbsp hondashi pellets

Method

  • Take a sauce pan. Add mirin, sake, sugar and hondashi pellets. Mix until everything has dissolved.
  •  Bring everything to a boil and add soy sauce.
  • Mix it well.
  • Once your sauce is boiling, reduce the heat to low.
  • Allow the sauce to simmer for 15 minutes.
  • After 15 minutes, bring the sauce up to a rolling boil (where you see lots of bubble).
  • While stirring, slowly add cornstarch slurry.
  • Stir continuously until the sauce lowers back down. If you don’t stir, your sauce will boil down over the pot.
  • Allow the sauce to boil for another 5 minutes or until it looks something like syrup.
  • Allow the sauce to cool in the refrigerator for 1 hour and then pour it into sauce bottle.
  • Enjoy!
  • Store this sauce in the air tight container for up to 2 weeks.
