- 1 T/S CORNSTARCH
- 1 T/S GRATED GINGER
- OIL FOR DEEP FRYING
- 2 T/S FRESHLY CHOPPED PARSLEY
- SALT TO TASTE
- 3 CHOPPED CHILI

STEP 1:-
- CUT EACH EGGPLANT LENGTHWISE, ABOUT ONE THIRD OF THE WAY FROM THE STEM END. MIX THE SALT, MEAT, SHRIMP, ONION, GARLIC, CHILI AND GINGER AND CORNSTARCH. TAKE A SPOON OF MIXTURE AND MAKE A ROUGH BALL, STUFF THE EGGPLANT IN IT. DUST WITH SOME DRIED CORNFLOUR.
STEP 2:-
- HEAT THE OIL AND DEEP FRY ALL EGGPLANT. SERVE WITH SOME FRESHLY CHOPPED PARSLEY. ..
