- 3⁄4 CUP CARROTS, GRATE
- 1⁄4 CUP BEETS, GRATED
- 1⁄4 CUP BROCCOLI FLORETS, CHOPPED INTO BITE-SIZED PIECES
- 1 HEAPING TBSP DRIED CRANBERRIES RAISINS
- 1 TBSP RAW PUMPKIN SEEDS
- 1⁄4 CUP FRESH MINT LEAVES, CHOPPED

- JUICE OF 1 LEMON
- 4 TBSP HEMP SEED OIL OR OLIVE OIL
- 1 CLOVE GARLIC, CRUSHED
- 1 TSP DIJON MUSTARD
- SALT AND FRESHLY GROUND PEPPER TO TASTE
##METHODS##
- IN A MEDIUM BOWL, COMBINE ALL SALAD INGREDIENTS AND TOSS.
- IN A JAR, COMBINE ALL DRESSING INGREDIENTS AND SHAKE WELL.
- POUR OVER SALAD, TOSS AGAIN, AND SERVE.
