***INGREDIENTS***


  • 250 GRAMS AFGANI LONG GRAIN BASAMTI RICE
  • 3 WHOLE MINI CHICKENS
  • 1 STICK OF CINNAMON
  • 4 BIG CARDAMOM, 3 SMALL CARDAMOM,4 CLOVES, 1 STAR ANISE
  • PINCH OF SAFFRON SHOCKED IN WARM WATER OR MILK
  • 3 T/S RAISNES
  • 3 T/S CARROTS
  • 2 T/S OF GINGER THIN SLICE
  • 1 WHOLE PEELED GARLIC
  • 1 THICK SLICED POTATO
  • OIL FOR FRYING
  • SALT TO TASTE
  • 2 T/S CHILLI POWDER
  • 2 ONION SLICED
  • 4 T/S BUTTER


###METHODS###



  • HEAT THE PAN.ADD FULL WATER OF PAN THEN ADD OUR AFGANI LONG GRAIN BASMATI RICE AND ADD SOME DROPS OF OIL AND OUR HOT SPICES(CINNAMON, CARDAMOMS, STAR ANISE AND CLOVES) COOKED THE RICE AT LEAST 3/4 PART OF RICE. 
  • TAKE THE WHOLE CHICKEN AND MARINATES WITH CRUSH GARLIC AND SOME LIQUID OF SAFFRON AND SALT.MARINATE IT FOR 1 HOUR.
  • HEAT THE HEAVY PAN. ADD OIL FOR DEEP FRYING CHICKEN.
  • AGAIN HEAT THE PAN. AND STIR FRY OUR CARROTS AND RAISNES ADD SOME SUGARS FOR THE BALANCE.
  • HEAT THE HEAVY PAN AND OIL THEN ADD THICK SLICE OF POTATOES THEN ADD DRAINED RICE WITH HOT SPICES.AND ADD BUTTER, RED CHILLI POWDER,CHOPPED CHILLIES AND COOKED IT FOR 40 MINS IN LOW FLAME.
  • TAKE SOME PLAIN RICE AND MIX THE SAFFRON LIQUID IN IT THEN TAKE AGAIN SOME PLAIN RICE AND MIX WITH THE CARROTS AND RAISNES. 
  • AT LAST FOR PLATING TAKE A LARGE SERVING PLATE AND SPREAD PLAIN RICE WITH THAT HOT SPICE, THEN ADD SOME SAFFRON RICE OVER IT, THEN ADD SOME CARROTS AND RAISNES RICE OVER IT.
  • AT THE TOP GARNISH WITH CORIENDER AND WHOLE CHICKEN.AND THE CRUST OF POTATO RICE.
